this depends on your cellphone. not all cell phones are able to upload the whole phone book at once. on most cell phones you have to transfer one entry after the other.
i enclose two examples of a procedure here:

Nokia N70 this one support the upload off all telephone book entry's at once!

• Ensure the HF is in pairing mode.
• Press the Menu key on the AG and scroll the Connect folder.
• Open the folder and select Bluetooth.
• Make sure Bluetooth is switched on.
• Using the directional keys scroll right to the Paired Devices screen.
• Press Options and select New Paired Device.
• Once the AG has located the HF select it from the list and enter the Passkey displayed on the HF
screen, when the AG gives you the option to authorise the HF select Yes.
• Select options then connect.
• The HF and AG are ready for use.

Default 400h bluetooth

Can you pair two bluetooth cell phones to the car at once? Seems to only let me have one connected at a time but has two separate phone books. any ideas?

jduboc, the system will let you pair two phones, but only allows you to use one at a time. You select which phone from the settings menu. You can either use one phonebook for both phones, or you can manually switch phonebooks when you switch phones, but it won't automatically switch phonebooks or phones for you.
