Depends on custom settings that can be configured by the dealer or via Carista App.
In 3RX, the default is manual, while 4RX is auto.
On mine if the doors are locked the first time you press it the doors unlock then the second time opens the hatch. If the doors are unlocked pressing it once uses the motor to open the hatch or pressing twice lets me manually open it.

Wow... have you tried seeing if anyone (without a key fob) can open the rear hatch with the double-press, or does the key fob have to be within range?

Need a key in the proximity to unlock, my friend. The smart key system is pretty robust. And it has to be, considering there's millions of vehicles out there with it in it.
If the doors are already unlocked you do not need the key fob within range to open the hatch. If they're locked you do. On my GS you need the keyfob to open the trunk even if the doors are already unlocked which is kind of annoying.

Is there an option to change that on the GS? I can set it up either way in my Audi.

That's crazy. What year is your GS? On my GS, if the doors are unlocked, you can open up the trunk from back without having the key nearby.
