My 2004 LS430 says i have a low tire, however i don't really have a low
tire!! Will weather cause the computer sensors to malfunction?

Yes, weather, especially rain a/o snow, is one of the factors that can cause an incorrect "low pressure" trigger in the TPMS. Unlike newer systems that monitor the pressure directly in the tire, the LS430 used the ABS system to "monitor" the pressure based on tire rotational variances, so even small things like changing a tire can offset and cause the system to think you have an underinflated tire. That is why the manual says to reset the TPMS after rotation, tire change, pressure refill, etc.

Hey, it's was a quick and "dirty" way for first generation systems to monitor the tire pressure. Works most of the time in theory, but wasn't very good in practice at times.
