On my way home just now using the feature somebody did exactly what you described. I put my foot on the brake out of instinct so I never got to see what the car would have done on its own.

Appointment for the Pacifica Tuesday at 9AM. Made the appointment 3 weeks in advance because that was the earliest that they had a diagnostic tech available. It was supposed to be back tomorrow. Now...tomorrow is 3.5 days of solid work to perform a recall, secure a piece of loose insulation in the fender and look at why the rear window wiper was skipping...we're not replacing an engine here...texted the guy today to see if it was still on track for tomorrow. This is the response:
Are you ******* kidding me?! Remember, no loaners! I had to give them a hard time to get this Prius loaner...so my family is squeezed into a Prius loaner while my minivan has been sitting over there for 4 days waiting for a tech after waiting 3 weeks for an available appointment! Thats a joke. I'm so mad.
If its not with a tech tomorrow I will just go pick the damn thing up and take it somewhere else.

Actually Mercedes did the same thing to me one time, the car sat there 5 days without being looked at and I did go pick it up and took it somewhere else. At least with MB I was in an MB loaner, but had I not really insisted I'd be PAYING for a rental car.
That to me is just the absolute worst, schedule for the techs availability, if they can't make my appointment...reschedule it.
I'm going to call another dealer tomorrow and see if I pick it up and take it there Monday could they actually look at it Monday...

I remember when we had the ES300 and the Prius, we did take the Prius on road trips some because that was back when gas was super expensive during the financial collapse, and I was far more worried about what things cost back then than I am now...it was painful

i think you've nicely made the case why i and millions got a tesla model y. 
- loads of room and compartments
- heated/cooled seats
- power rear folding seats
- quick
- very quiet and smooth
- all the security and features most humans could want and many they didn't know about or never thought they might like or need
- great range (over 300mi. unless frigid or driving 90+mph)
- reasonable price
after you return the prius, i think your wife should test drive a model y premium and really test full self driving.

oh and sorry for the service headache, that’s ridiculous. about the difficulty of getting a loaner, i’m not surprised, seems like dealers have cut WAY back on them.

I would take the Prius so I'm not wasting hours of my life waiting for the EV to charge. Going 85-110 on a trip will murder the range and 6-8 stops is just idiotic
