you're right i can't find the sc300 blanks on tire rack, hopefully someone with more knowledge will chime in and help you! i'm not familiar with any of those brands, well i am with autozone but i tend to stay away for some reason.
You guys have done this job before, can I just remove the whole brake caliper by undoing the bracket itself (with pads, caliper and everything as one piece?)
I will have to push the pads back a bit.. to fit the new rotor, but I don't really want to remove the caliper pins if it is not needed.
That's a lot more work than necessary, just remove both the upper and lower bolts that hold the sliding caliper to the pins and slide it off. The pins themselves will stay in the bracket. Though it would also be a good time to make sure that none of the pins are seized as well. They have a tendency to dry out and seize over time. Make sure you use good moly type grease if you do need to regrease it.
