I would normally agree with you, but that hood is the clearance for the super charger he's running on his 5.0L bored out motor.
As for the re-inforcement thing, my sister has a 06 Mustang GT Conv, I was doing an oil change on it today at work, and when i put it on the lift, the car has a huge tubular steel "X" Brace bolted to all 4 corners of the car, it goes right above the rear diff, all the way up to the front engine cradle, i guess that's what would need to be fabricated in order to chop an SC's top and not twist the car into a pretzel the first time you go around a turn.
Now i wanna buy a cheap beater SC and get out my saw-zall

You will need some serious bracing underneath for a car that is not designed to be a convertible to begin with. Rockers panels are generally reinforced as well. Otherwise there will be a lot of flex in the chassis creating a dangerous piece of metal in case of an accident. You would not want your car to ,"Fold up" with you inside in case of a frontal or rear ender. Not to mention the weaker A-pillar in case of a roll over. Personally I would highly recommend against it just for the safety cocerns. Just snipping off the top does not make for a safe vehicle. Though it does look good.
