Question Voice Input: Need Cheat Sheet!

OK, I'm trying to figure this out, but I can't find anything that defines the valid voice commands are on any given screen. (So apologies in advance if these are stupid questions.)

E.g., from the main screen, if I say a name that I have programmed in the phone book, it says "Voice Dialing Activated" and takes me to the phone screen. Then I have to say the name again. There must be a faster way. It seems like if I say "Call Joe" that it should just make the call right away.

Basically, what I want is a simple list of what the valid commands are on any given screen. Does such a thing exist? I can't find it in the manuals. Something like:

Main Nav Screen:
"POI <ON|OFF>"
"GO <destination name>"
"I'M HUNGRY"
...

Main Phone Screen:
"CALL HOME"
"CALL <name in phonebook>"
...

Am I being stupid?

Also, is there any way to interrupt or turn off the voice prompt? E.g., can I just press the speak button and hear a beep then immediately say what I want instead of waiting for the voice to finish some long sentence before I can start talking?
