Probably over thinking this but....
So my wife buys me a fancy new OBD2 scanner for my birthday and of course I had to try it out. So I went out and did some data logging and upon reviewing it, I noticed that the throttle percentage never went above 80%. I know I pegged the pedal all the way down at least twice so Im wondering if somethings not right with the electronic throttle. Is this normal or have I been missing out on 20% throttle all these years?

with out seeing exactly what you were logging it sounds like its the throttle plate open % and that can not exceed 80% from what I recall. This is different that logging say % pedal position sensor that's the foot pedal position. So if this is what is going on its correct and normal. You may also see your ecm pull tiiming and cut back as part of the management systems program to control over shooting of various parameters etc. These things are not straight forward in reading with out specific knowledge of how and what it is and how its controlled. I drove myself wacky when I first starting logging and tuning my excursion power stroke with the added complication of its HUEI injection system.
