I've had this ingoing issue since I got my car. If I have the heat up too high then the windows start to fog up. I then have to hot the defrost button which clears up the windows but also starts to push out cold outside air. I have to rinse and repeat during my whole commute. It gets annoying. I never had this issue with my 400 and I'm pretty sure it has to do with me having front and rear AC controls or not. I just can't figure it out.

or maybe the AC shows as on all year around in Auto mode but it just faking me out and does not come on unless the temps call for it?

Yes, leave the AC on at all times. AC doesn't mean only cold, it also means dehumidified. It's regulating humidity and heat/cold even in the winter months.
