It sounds like a fuel pressure problem. Next time, try turning your ignition all the way just short of engaging the starter. Give it a minute for the fuel pump to pressure up the line, then turn the ignition to engage the starter to see if the engine will stay running.

Check fuel pressure off of the rail to start with. I'm not sure if our rails have a valve to test with, or if you'll have to use an adapter off of the feed line. Priming the pump as rkw77080 suggested is also a good idea. If it is not a fuel pressure problem, I would suspect that you have a problem with your cats as a failure to rev past a certain point can be a symptom of a clogged cat.

Check www.myLparts.com I've ordered from them and they're good.

Fuel pump for that car is item 15 in the diagram with part number 23221-50200. It's $296.37.
Looks also there are two fuel filters - item 17 for the fuel tank (23300-0A020) and item 18 (23217-46090) for the fuel pump. Both are pretty cheap.
As far as putting that in, I'm sure someone here can give you instructions. Make sure though that it is indeed the fuel pump. Nothing more aggravating than to do a big job and then have the same problem. Might want to hook a fuel pressure tester up to confirm that's the issue as others have suggested.

Since you are able to keep the engine running once it's started, it is unlikely that the fuel pump is the culprit.
The LS430 fuel pump maintains a constant flow rate of fuel to the engine and the excess (fuel not consumed) is routed back to the tank. At the end of the return fuel line (see circled in red below), there is a pressure regulator to keep the fuel line at proper pressure. Normally once the ignition is shut off, the regulator will maintain line pressure for a little while, but for sure, the fuel line is kept filled. Next time you turn the ignition, the pump pressures up the line and everything is back to normal operation.
Here is my speculation... I suspect that the problem lies in a small leak that drains the fuel line when the ignition is off. You mentioned that the engine starts but dies soon thereafter. This tells me that there is some fuel at the fuel rail, but there is a pocket of air in the line between the pump and the rail that stalls the engine of fuel. Allowing the pump to run a few seconds, before cranking the engine (consuming fuel), helps eliminating this air pocket.

Is the check engine light on by chance?
What's the mileage on the vehicle? Pump failure is uncommon on these cars, but it can happen.
Do not fire the parts cannon at your car until you get the troubleshooting done.

So can you share some background information on this issue? Did it start happening after some work was done? Did it happen suddenly or gradually? Under what conditions does this issue occur, only when engine is cold? Does it always choke at 3000 rpm or does this varies? What happen when you try to push pass 3000 rpm, does the engine die/flooded?

Have you check intake hose? I am thinking that maybe it is loose or ripped/cracked. The hole does open up until 3K rpm when the engine is working harder than idling.
