I'll probably end up with the same set up as you, which may be failrly unique around here, lol .....keep using my 17s for winter, and if I am lucky and find LS400 16" wheels, use them in the summer.
I am guessing this may be because of your tire choice ... but I am hoping I find it a bit smoother ( and less wandering too )
Very possible. I was swapping from the 17's with Dunlop OEM tires to 16's with Michelin Primacy. The reason I bought the 16's was exactly what you wanted - more comfort. I definitely did not like the look of the smaller 16's on the car. I never tried different tires and just finally gave up! Good luck, should be easy to find the 16's - I bought and sold my set of 4, with Michelins, for $250.
If you're looking for an even softer ride than the LS currently has, then going 16 is definitely the way. ......
I am trying to find LS400 16s, but its not so easy to find around here. They look fine to me, but I would rather see a large sidewall than a large wheel
If I can't fing OEM 16s, I'll just buy new 17s in the spring,

You're saying you fit stock Lexus GS300 AWD on your LS ? I am surprised they fit. I am guessing you have a early model LS - mine is a 2005, and I was told they don't fit. Can you post up a picture .... ?
