To answer your question, I run 245/35/19 and 285/30/19 Bridgestone S-04. These sizes are closer in outer diameter to stock than the sizes you are proposing to use.

This is my current plan of upgrade. The overall diameter will increase by about 11/16" in the front (close to 3/4") and by about 9/16 in the back (a bit more than 1/2"). This means that your fender gap will be reduced by about 3/8" in the front and 1/4" in the rear.
The road conditions in NY is the main reason why I want a bit more of side wall on my tires. I already had to fix one of my wheels.

Like you said that living in NY so you need more side wall right ? Why not ? With that set up OD will increase on the front 16mm ( ride height gain 8mm ) and on the rear 14mm ( ride height 7mm ) so the fender gap will decrease the same amount.
