So I press the windshield defroster and it turns on and then when I press it again to turn it off, it turns off, but the automatic climate control turns on.

 

mine does the same so i don't think there's anything wrong with yours. that being said, it does annoy me too.

 

it does it for me too, i just hit the off button right away. but i have also always wonder why it does this

 

my E does that too, its usually to stop the windshield from fogging up again

The assumption is that it's a good idea to take humidity in the cabin out of the equation.

 

I just hit auto and hit off again and it turns off. Kinda annoying

 

i actually kind of like it. with the system in auto you press the defrost button and it turns on defroster full bore, unfogs the window quickly, and when you press it again it is back to normal. i think it is well thought out and a nice feature.
