im going to put 20`s on my 99 aristo, the rims size are 20x8.5 in fron and 20x10 in rear.
i have a set of brand new tires which im going to use and there sizes are
245 30 20
285 25 20
what offset to get that i wont run into rubbing issues and the car does have full adjustable coilovers. i also do want to slam it to the ground
I had 20x10 +35 on rears with a mild stretch. Rolled my fenders and it stopped but the tires still rubbed in the wheel well. But as yakuza said, 40 should be good. I still think you would have to roll the fenders if you're going to slam it.

Since you changed your mind and decided not to slam it, then +40 would be good with a "little" drop. But still, I'd roll it being that it's 20's. You're still gonna get rubbing in you wheel well regardless going over humps at certain speeds. You can heat the plastic trim in the front with a heat gun and push it up to make the mold higher. That's just my experience with 20x8.5/10 + 35 all around at stock height.
