If you dont want to do fender work , stick with high 30's . But here is a site that you can look at to get some ideas

The only issue with going with an aggressive offset is fender interference, right? So... If I bought rims with an aggressive offset, AND didn't lower my car, I would be fine?

like mentioned above, rimtuck is an good start to get some ideas. not sure what kind of look your going for or how far you're willing to go as far as fender mods but keep in mind that lippage varies between different types/design of wheels even when having the same width and offset. for instance the work varianza f2s runs more lip than the work varianza d3s despite having the same exact specs. so you can't just base offset off the look of another rim. the disk type of the wheel also plays a role. learning how to read the spec sheet of the different wheels (if available) your interested in will help out greatly. As they provide info like the rim depth based off a certain width, offset and disk type....take time, get to know what you want as this will be one of, if not the biggest investment for your beloved gs....here's my setups and as you'll see despite the F2S's being in the mid 30 offset range, they still run about the same lip as the Amistad's running a low 20 offset. hope this helped

Amistad V 19x9 +21 Mid disk/19x10 +21 Mid disk

Work Varianza F2S 19x9 +34 Odisk/19x10 +34 Odisk

I guess it kinda depends on what the purpose is. I just like riding on big rims.

I really dont want to get into any fender modding to be honest, maybe a slight shave thats all, I want to go almost all the way down on my tein cs coils. thanks shoeshine lots of info, but somewhat confusing to me.

What suspension are you running on Shoeshine for the top one because I'm digging that set up that you have going on in that first pic. And the rims, so now I need to talk myself into buying another set of rims and a coilover set.
