all 2001 ES300 came with wood grain steering wheel including Coach Edition.In 2000 the only one that had wood grain steering wheel was the Platinum series and non platinum did not and then 97-99 only had all leather steering wheel.
Different options. Some cars have extended wood trim, which would include steering wheel. (haha, I said extended wood :P)

While we are on the topic of wood, how many available trims were there? I am much more familiar with BMWs, and there are so many options for wood its crazy. But my 96 ES has a light maple pattern, I've seen 2001 with a darker maple?, and some 2002+ that have a reddish wood to them. Just curious.

Run your VIN by the dealer to get the as-built configuration - mine is birds eye maple (the light amber color, which I think looks better with the black interior) there is also a darker, burl wood.
