I'd like to modify my SC400 exhaust to allow a bit more of the V8 sound through. I still want the car to be mostly quiet at cruise, though, with no annoying resonances. I'm hoping a simple change of the rear cans would do this. Any advice on which products would be a good choice?

Replacing the rear resonators is probably what you need more.
