Do you know what tire sizes you would use?

well anytime you buy a set of decent fitting wheels you'll need to roll... but that's no big deal. if you're not down to roll your fenders just stay on stocks man. 8inch and 9inch is hella narrow though you might not even need to...

Ive been looking at some Ace Trend rims that are 19s. 8.5in wide. Think the tire size i need is a 235/40. Will it rub?

if i were you i would use a 245/40 in the rear and a 225/40 up front it shouldnt rub with just a spring drop. if it does it will only be the fender lips by like a quarter inch or so...

indeed i am. i have 18x9.5 rear and 18x8.5 front both 20+ and when my car wasnt as low thats just about how it was with my car... yours are smaller width, diameter and higher offset so it will be less than what i experienced. they will be very close to completely flush with the body
