to each their own. every car has a purpose.
for a street cruiser i would slam it as low as i can and tuck pretty much the whole sidewall while being flush/poking tire a bit.
for the track i wouldnt care how it looks. i would raise it to sane height and run a normal size tire like a 265/35 on a 10-10.5" wheel.
just because you dont like it doesnt mean it doesnt look good. i personally dont like 97+ body, AC kits, pr RSP. thats just me and doesnt mean it looks bad because i dont like it.

But to your stretch, meh... I was running 215 on 9.5 and 245 on 10.5 as well.

a lot of stretch is mostly for the "flush look" and making the wheels fit and look "cool"
a mild stretch actually pre-loads the side wall and prevents it from flexing under cornering.
most people that dont like stretching tires are into big fat tires to hook up and go in a straight line and in that case the taller the side wall the better but for roadracing you dont want the sidewall to flex.
try stretching a set of bridgestone potenza s-03's, re-01r's...wont happen. sidewall is very stiff. most toyo and dunlop tires are a lot softer and will stretch nicely.

Different strokes for different folks. Our SC's would be boring if everyone had the same tastes and styles.
