I would push the rear further out, however. I am on a +35 offset (Supra TT Wheels spaced 15mm) with a 285 tire, and I avoid rubbing by 3-4mm with the factory alignment rods running the minimum camber possible.
On a +49 offset, you would have to run a 295-315 (and you could with such an offset) to make the tire flush up with the fender. From experience, with a 285 on a +49, the tire looks like it is swimming in the fender well.

I think this is pretty accurate, and -if anything- a bit of a safe over estimate. With a BFG, you will need the high side since their section width is more meaty. With a Dunlop, you should be able to pull it off with the natural camber of the drop. Regardless, the factory alignment rods should be more than capable of capacitating this.
Remember that Cherplex fit a 275 Direzza on a +24 with normal camber from his drop. He also fit a 245 up front on a +24. Both of your suggestions are in that area, suggesting the viability of the fitment.
I am currently running 285 tires on a +35 in the rear, and I have 3-4mm of fitment before rubbing with the camber dialed in at max positive...and the 285's I have run wide (292mm section width). A little tire math will tell you that a 275 -wide or narrow- should fit on my car with a +26 offset even though I have only -1.2* rear camber.
I think 19x8.5 w/245 and 19x10.5 w/275 at a +22 offset would look great with the factory alignment rods giving you all the adjustment you would need to make them fit.

How will this fit? 18x8.5 +39 on the front, and 18x9.5+15 on the rear? What sized tyre will i have to stretch on?
3 piece wheel so Im guessing the offsets of the front can be changed. Is this very hard to do?

Offsets can't be changed (unless the actual metal is skimmed/welded... I wouldn't recommend either method).
Fronts are easy... you shouldn't need a roll nor stretched tyres... rears will need the guards rolled/shaved and probably running a 235 or 245 width tyre.

19x8.5 +21 offset with Toyo Proxes 245/35/19
