Exactly what are the specs on these wheels including offset?

They are the OEM "upgrade" wheels:

Anyone know of a nice looking replacement wheel that will fit my existing Michelin LTX M/S size 235 70 16 ?

Just looks like a stock chrome wheel with a Toyota center to me. They make stock reproduction wheels too.

I think they are 16x6.5 +35mm offset.
