I don't want to spend more than $800 on a set of 4 if I can help it. Which I know makes my options list considerably less. As far as offset I don't really even know?
19x8 to 19x8.5 with an offset around +35mm is pretty common.

I have a 2002 LS430 UL with a stock suspension and was looking to get a set of 19” wheels for the car this summer. I don’t know a whole lot about wheel dimensions and sizing. This thread has been helpful but it’s also got me wondering what exact dimensions do I need to look for to avoid body work/rubbing and ensure that I’ll be able to clear my brake calipers? Maybe it doesn’t exist but I thought I’d ask specificallly and see what kind of feedback those who are smarter have to offer. Thanks!
I know that this story does not answer your question but I want to share it with you anyway.
When I was looking wheels to my celsior I thought that it's easy task. I was looking used set of 19" or 20" ~ET30-40. At close range I went to try out several different wheels but none of them fit. They either do not clear brake calipers or they came too much outward. Because I don't want to do any bodywork I just had to keep looking. When I eventually found one that fit I had to buy them right away. A few months ago I start to find new wheels because i wasn't completely satisfied to my current summer chrome wheels. Because I know how difficult it was to find wheels last time so this time I took several measurements and see how much space should be between brake caliper and wheels. Then I send those measurements via email and I usually got the answer that they do not fit. One company that sell new wheels answered me that this one wheels should fit. I send message back and say that I liked that wheels but "should" is not enough and then they took wheel measurements and they say that if I make measurements correctly it should fit but certainly fit if I add 3-5mm spacers. Now I have tested them and using 5mm spacer there is 1-2mm gap between brake caliper and wheels. Those new wheels are front 8,5x19 ET35 and rear 9,5x19 ET37
Of course, this measurement way means that the seller has wheels in stock so that they can take the measurements.
And of course I must say that I live in Finland where everything is smaller than anywhere else and this also applies to the amount of different wheels

I would prefer to run square stance so I cam rotate them easy. Thinking a 245-40 tire.
Will this clear everything? Thoughts on fitment and looks? I've heard of the brand but dont know the quality.

The fitment is a little on the aggressive side for the front axle as your pushing the max tire width and max offset for an 8.5-inch wide wheel, but you should be in good shape.
Is there a reason you're looking to go 245/40 instead of 245/45R-18?
I don't have any experience with Varrstoen wheels, but I haven't heard anything negative about this brand. The Niche Altair may be an option for you too.

Hey guys, i need some advice. I been looking around at other users setups and what is generally recommended but can anyone tell me if this setup would work?
20x8.5 +30, 235/40 squared? I seen a user in this thread running this, Front: 20×9.0J, +32, 5×114.3 & Rear: 20×10.5J, +45, 5×114.3 and it seemed he was doing fine on a mild drop.
Now i did some math with an offset calculator and it seems ill have way more inner clearance and the outer clearance would be retracted in 4mm and 10mm respectivly. So i should be ok right? Because i have seen other say i shouldn't run more than +36 in the front.

I'm on 19x10.5 +22 with 265 35 19 upfront.
It fits. No fender mods.. i do have A arms upper..
Ok, I'm going to jump in..looking at 18x8.5 +20 on the front and 18x9.5 +20 on the back. Car isn't lowered yet, but plan on regular BC's, not going super slammed, but want a filled out wheel well.
As follows recently went through the adventure of finding and sizing wheels and tires on my daily.
