Go back to 5w30 or remain on previous owner 10w40?

If the requirement is 5w30, use it.
Sounds like someone used 10w40 in it, you know whatever his thought process is who knows but why use something other than specifically recommended?

My main worry is I don't know how long they used it and would going back to recomended 5w30 have any back affect

10w-40
10W-40 ("10W") is not ideal from a cold start perspective and the "-40" is not optimum for efficiency or power.
0W-30 (synthetic) works better than 5W-30..or go with 0W-40 synthetic instead of 10W-40.(mineral -based oil).

Wrong, and wrong,

OP... use whatever you want. If you park outside in a cold winter you might want to go for 5w40 instead of 10w40... otherwise just use whatever you think is best quality for a good price (ie. pennzoil platinum) , is easily accessible where you live, on sale, etc.

I don't trust the above chart.
Toyota 98 Celsior user's manual says this below. The 5W-20 is still OK at 40℃+.

Actually, the chart with 0w60 to SAE 50 is very, very accurate. The most accurate I have ever come across, in fact.

5w30 drops off past 30c. The last chart I don't trust.

There is also this, from an IS350 owners manual in UAE -

I used to work turning wrenches in a few different shops, not a pro here or anything like that but the main thing is changing the oil regularly whether its 10w40 or 5w30. Some people attribute it to "winter" oil and "summer" oil. Some think it'll run a little quieter with certain oils. Some people do alternate so no I would not spend a second being concerned about that personally regarding switching to 5w30 it's 100% fine in my view. It's just metal parts and bearings that need lubrication is what it comes down to, that's all it is. Probably the oil pump is designed for the viscosity and flow through rate of the 5w30 oil, not to say you can't run 10w40 like the last guy did. The engine won't "know" the difference per-se but it is designed for 5w30.
