Thinking about moving into a LC (2019+) from my e92 M3 and I have a question - any input/advice is much appreciated!

- Ideally, I want all leather seats with the semi-aniline leather, so the touring package seems like a must. However, there's no way for me to option rear wheel steering if I get the touring package, and a lot of reviewers make RWS seem necessary (the car will be my DD). Does rear wheel steering make that big of a difference in the daily drivability?

welcome. depends on your 'daily driving' 
if it's just a gentle commute, then i would say no.
if it has some, uh, spirited driving, then yes, it will make it more fun.
reviewers of course always want the most capable setup, but very few LCs are sold with the rear steering and it's not even available on the convertible (which is now 3/4 of al sales).
i have it, but can't tell if it's that, or the other part of the package, the variable gear ratio steering, that makes the steering so amazing, but they only come together or not at all.

The semi-aniline leather in the LC is not nearly as soft, buttery, and pliable as the M3 upgraded leather, FYI.
The LC’s semi-aniline seat leather will hold up better over time but it isn’t even on the same playing field as BMW, Porsche, RR, etc’s Semi-aniline hide.

If it makes a difference, i did ask in this forum about how well the alcantara seats hold up over time, and a few members posted their 3 year old high(ish) mileage seats and the seats looked as good as new. So the good news is that they will wear well over time, most likely, if that is your concern
I had a similar dilemma where i asked the dealer in my country if he could get me an LC500 with all the sport package options, only with full leather seats instead of the hybrid leather/alcantara which is something i am not used to at all. After much back and forth, it was not possible, i had to either choose the coupe with the sport package or the convertible with the full leather interior, and those were my only choices. The convertible is just too impractical for me, and i like a good hardtop so i chose the coupe

There may be a way to do this with the new "bespoke" package my dealer has told me about where you can pick what seats, wheels, roof, spoiler etc you want from a menu and they will build it. I don't have all the details yet but was told by the dealer that they will have all the information by 1 October along with pricing. I am waiting to see what this package will be before placing my order.
If you want the touring seats with all the performance goodies you need to find the 2019 Inspiration Series. However, it only comes in yellow with white seats. The rear wheel steering makes the car feel much smaller than it is.
Thank you everyone for the input. Looks like i'll just have to go with the Alcantara seats so I can get the RWS and other goodies.
Hopefully it wears well. I know that there's a thread on the alcantara somewhere and most of the reviews were good (even though nobody had super high-mileage). I've just seen alcantara wear terribly in AMG products, Audi RS products, SRT products, etc. Although this was usually on the steering wheels where grimy oily hands are always touching.
