I take it that the offsets have nothing to do with how much concavity the wheel will have?
I know for some wheel manufacturers (sp?) the less offset, say -5 offset will yield a greater lip for example. And the more positive offset say +45 will yield a small amount of lip.
Is that the case for concave wheels as well? The more positive offset the less concavity?

In regards to the design of the CV3, no. You get that concave look regardless of the offset. And you will break those necks in a classy way. Pic for example
