IMO sterling looks a bit cheap. It looks like the low grade artificial silver/grey leather used in american cars (GM, Ford).
I love the cashmere interior. Its very inviting and the 2 tone is more apparent. It also reminds me of velvety vanilla cream milkshakes?!
Black makes the interior look cramped and it seem like every panel is connected (fades in to each other) so its hard to differentiate/appreciate the texture/variety of the interior materials. It looks very classy and sporty though.

I almost settled on a Smokey Granite Mica last night after the dealer sold the car I was originally looking at. It had grey interior and it looked hot, but I HATED that the center armrest was grey. It just looked so out of place. They had one with black interior that had just gotten sold and it was really sexy.
So I say Black!

What type of person are you, an OCD neat freak or a 'I'll get to it later' type ?
- if the former, go with sterling, since you'll clean up all the scuff marks or dirt smudges when they happen.
- if the latter, go with black, since it'll hide all the beauty marks except for dust, which cannot be helped.
Since I'm neither, I opted for Cashmere (hides dust very well) . . .
