I've never had a shop pull off the door panels, and I would bet that the overwhelming majority (90%+) of tints don't remove the panels. I don't think there is right or wrong way, if done right by an experienced installer it can easily be done without removing the panels.
dropped my car off at 12pm, picked it up at 630. they just dont charge more than 160 to tint any car. they're the cheapest around and busy all the time...call em up and get a quote. theyre the SHI.
