Default Folding Mirrors

Does the IS have electric folding mirrors? If it does, can you set it to fold when you lock your doors?

No. manual folding.

I'm surprised it doesn't have this feature, especially considering it's designed and made in Japan, where parking spaces are super tight.

Since I'm from Taiwan, I'll speak for the market there. In Taiwan the parking situation is similar to that in Japan. Almost all domestically made cars including some very low-end ones come equipped with power-folding outside mirrors, no matter how otherwise stripped the cars may be. The power-folding mirrors are just THAT important there. So before the '05 ES arrived, everyone who bought an ES in Taiwan complained about the lack of power-folding mirrors and how they looked stupid in front of other domestic car drivers when they had to go outside of their "luxury" cars to manually fold the mirrors.

Very used to the folding mirrors on the LS...the GS has then too, right?

My ex's 2001 ML had them and I loved them. It would protect the mirrors at night from people on bikes and made it easier for me to get into tight spots.......on the streets, that is.
