The hard choice
I've been wanting a gs for a long time now and I'm finally getting close to getting one. My decision is between a one owner Lexus maintained 2006 or a 2 owner unknown maintenance 2007. The links are below two I'm considering, it would be awesome if you guys could take the time to help me out and give me your opinion of the two.

I really like the 2006 due to the maintenance but I know the 2006's have more problems.

If you go on the Lexus owners website or download the app, you can put in the VIN number and see the service records of the cars, at least for stuff done at the dealership, the 07 looks to be in great condition and it's definitely the better engine of the two.

The 07 hands down. Has the Premium package with the rear sun-shade (totally useless but cool to have), the park assist that beeps when you're about to run a kid over, and headlight washer (great for getting pedestrians or baby cousins wet as you drive by them)
But no the extra 80hp on the 350 should be enough incentive for you to pick the 07 instead of the 06.

350 over 300 over here also, for reliability issues (even though I haven't seen any problems on my friend's gs300).
The MPG range on the 300 though.... it's pretty stellar lol. I have a friend who steps on the gas pedal like it owed him money and he still gets 24-26mpg.
Me driving it after a fresh tank, on my habitual pedal movements (not too harsh and not too easy), and i got an easy 30mpg after 150mi.

Thanks for all the input guys, I really appreciate it. I've also been thinking about possibly getting an RX instead. How does the reliability fare in them compared to a gs350? Would be looking at a rx330 or rx350.

The RX is a good choice, but on many of the used gasoline powered ones I've seen, they have leaking steering racks at that age. Its an expensive repair, because the sub-frame has to be dropped slightly and the parts aren't cheap either.
