the ecu on our cars remember so many things about the car, like redline times, speed, engine condition, etc.... so i am wondering, would the computer know if and when the hood is opened? how about taking off the battery? etc??

Hood? Nah; I don't think there is a sensor capturing that data. I mean, there is no warning light if your hood is open while you are driving.
Battery? The battery cable is like "the light at the end of the tunnel" for the ECU I'm guessing. Once it reaches it, it's all over.
Just from the discussions here, I'd say the short term data (unsure of technical term) is wiped like radio, seats, transmission adaptive settings, and the items you listed above.
Case in point: you take your GS to the dealer to have something fixed but they can't help you because you pulled the battery cable and wiped all the codes, etc. (sound of Lexus technician grumbling)
The only "Big Brother" stuff I've imagined is the Lexus Link functionality, which from what I understand is a kin to the OnStar, when GPS, owner, and car data is transmistted via satellite as needed for emergencies and whatnot; the "and whatnot" part is the scary part. I envision "Enemy of the State" footage.

haha, nothing illegal here, i was wondering coz' they are working on my check engine light and still no results, so dunno why it takes so long and whether they know how much i mess with the engine of my car (basically doing nothing but opening up the hood and look at all the wiring)
There is a sensor for the hood connected to the alarm system. If you open it while the system is armed...well, pop your hood, lock the vehicle and wait for the system to arm and tell me what happens when you open the hood
