I just purchased a 2021 Certified ES350 Ultra Luxury and when attempting to adjust the HUD settings there apparently isn't a setting for the brightness or position of the HUD. Am I missing something or is this just not an option in the 2021 model. I see YouTube instructions for 2023 models that provide that option but can't find any information on the 2021 model.
When you get to the vehicle and meter settings do not press ok just continue to scroll down and you will see more settings and there will be the adjustments for the HUD ,brightness and up and down adjustments.

To supplement jimbosr1 posting, you might want to bookmark Northside Lexus's Melissa O'Connell's "2021 ES Full Tutorial - Deep Dive" YouTube video. While there's a few things she doesn't cover in her deep dive tutorial (e.g., fuse, battery, fluid reservoir locations etc.) she does pretty thoroughly cover all the items and controls most (non DIYers) owners/drivers may have a need to know about at sometime. While her deep dive tutorials are pretty long (the 2021 ES one is 1 1/2 hours long) if you expand the video description (click on "more" to expand) she provides an extensive time marked individual item index so you can quickly find and jump to the video portion of the item you're interested in. For example, there are two HUD related entries in the time mark index - 31:18 HUD Settings and 35:05 Additional HUD Settings. Here's the video time mark indexed to Additional HUD Settings:
