For me it's not really the fact that it's plastic, or the quality of the plastic, but it's the dash design. I can't quite put my finger on it, but there's something about that layout that just doesn't look very premium. Granted "it's a truck" but other trucks do it better. The center stack reminds me of a karaoke machine.

Yes, screen is too small. Too many buttons all over the place.
Yes, most of it is plastic....with some surface-coatings, in various trim-levels, to give it a chrome or wood-tone look. But what else is new? So is that of most of its competitors. And, in general, I preferred Chevy's instrument/control-layout to Ford's. But, in the end, it's not up to me...I simply test-drove this truck at the request of someone else.
Here'a a little more high-zoot version, BTW...I think you'll be able to tell the difference.
I think that is a Ram. The rotary shifter gives it away.
I did not include a Ram in the comparison because I talked to our maintenance-man about it, and he is leery about an FCA product. He's seen others buy Rams and have premature problems with them. I like the way the Ram engineers did the suspension and sound-insulation on the 1500, though...it rides almost like my Lacrosse.
