I know SC is capable of doing 155mph, just wondering what is your max? Last week, I did a 100 mph, on N I5 heading to Bakersfield. Seemed like 70mph and I have run flats.
I think I have had it up to 95 very briefly when passing and like my LS, THE SC felt like it had lots more room to go faster.
Be aware that in most states in the US, getting a ticket at that kind of speed, or higher, is a huge, extremely expensive problem (and likely also causes loss of drivers license for a year or more). The potential hassle and cost is definitely not worth the momentary thrill.

yes went past 110 and the wallowing was noticeable. Changed sway bars. Need to test again....
I've gotten up to 140 once in my 2002 with the top down on a new paved straight highway in Kansas City. Felt stable and you could really feel the car "dip" down to hold the road. Now I've upgraded the suspension, and probably do about 80mph avg with touches up to 90 and 100 on the highway heading in to work in the mornings (with my Cobra radar detector and Waze running). I agree, I feel that the SC340 really can cut loose. The upgraded suspension really keeps the car glued to the pavement.
There is an old thread with 3 or 4 folks discussing their high speed SC430 exploits. They were hitting about 155 mph when the governor stopped the progress. (Some more, some less.)
Occasionally, race tracks open up their tracks to locals for a fee. (They do that here at the Texas Motor Speedway.) You can go as fast as you want within reason there and even have banked turns.
