Just ordered a set of wheels, curious as to what tire sizes you guys think would work best. My front fenders are rolled already and I have the rear lips cut out of the quarters. Probably going to do a bit more fender work on the rear.. Fairly low already on Fortune Auto coils, plan to go lower with PBM.
Wheels are 19x10+22F

I haven't even gotten the wheels yet, also haven't pulled the car out of storage to start working on it haha. I was planning on running a 225/35r19 front and 245/35r19 rear.

^^^ sall good take your time. For the rear fender work, all you really need is the fenders rolled completely flat with a very slight pull. The 245s on a 10.5 would yield a pretty good stretch. A slight pull would be needed so the fender won't scrape the wheel lip on dips and bumps

I read thru your post, but wasnt sure of your question. +35 offset front and rear would do especially if you're rolling on near stock height.
You may have already saw, but here is a member with similiar setups (2mm difference in offset front and rear. 0.5" inch difference in the fronts, no fender mods) just to give you an idea before jumping in:

Need some advice on wheels; 18x8.75 +20 all around or 18x9.75 +20 all around. I don't want to stagger, but I'm trying to figure out what set up would sit more flush; will the 8.75s be too sunk in? Will the 9.75s stick too far out? I have no problem with fender rolling, and I am all the way down on my teins. Any advice would be appreciated

If neither of these guys know, my opinion is that they may fit for a BBK, but the tolerances may be millimeters. If that's the case, just run a spacer to clear the BBK.

The fronts should be easy to fit. Slight roll if any. The rears however will require the rear fenders to be rolled completely flat. The 255s should yield a small stretch on the 11's and the natural camber of 3-4 degress (depending on how low you are) of stock control arms should allow you to fit these with just the fenders completely rolled flat.

18x9.75 +20 all around. if you get the 8.75s, and you're gonna wish you went with the larger width, just my opinion. The 9.75 +20s would sit more flush with the front and rear fenders. All 4 fenders may need to be rolled, how much depends on how slammed you are and your tire sizes.
Yeah... I found out about the harness the hard way Slammed my car, drove for a few days, then noticed my dome light flicker then go out. Shortly after, my double din went out. Knew I had to have rubbed through something Luckily got it all straightened out and relocated
