Thanjs for the link, that thread confirms this is an issue on new EU and UK spec cars, and by law the setting reverts on engine start.

I was hoping there might be a voice command to quickly and easily change the setting but so far I have not been able to find one!

The fact the models in other countries don’t have it, someone may figure out a way to program it out with tech type software.

Word on Toyota forums is that the 24 and up MY for EU cars is not longer supported in techstream. There's a new sheriff in town: https://www.toyota-tech.eu/DiagnosticTools/Software/GTS I doubt that it will allow you to change a legal requirement, but check the attached guide in the link.
