The shields protect the underbody from all road contaminants. If you fall in love with the LS like many do, you'll want to keep it in good shape and not buy corroded replacement parts (pricey) unnecessaryily. Also, the car is engineered to be quiet, missing shields will disrupt that. You can find used parts and the fasteners are pretty cheap on ebay. Funny, I just read your initial post and I was going to say cars have been without those panels for over a hundred years, but then I read the sage advice from other members here, so I will defer to them.
