Engine Oil Level
When I first got my LS over a year ago, the oil level on the dipstick was slightly above the full mark. A couple of weeks ago, the oil light came on so I changed the oil. After starting the engine and running it for a few minutes to circulate, I let it sit for about 15 minutes and added oil, waited another 15 minutes to check that it was close to the full mark. The next day I added about a pint to get it up to the full mark. After driving it around and letting it sit for about a week, I checked the oil level and it was past the full mark like it was when I first got the car. I decided to draw some oil out through the dipstick with a small poly tube. I removed a little less than a pint to get it down to the full mark.
After driving it around again and checking the oil level after 30 minutes, the oil level was below the full mark again. Should I just leave it there and call it good?

I agree with swfla. For some reason, this happens from time to time when you check the oil dipstick and it will show different levels with no leaks. Just keep it a little bit below the full mark and that's it.
If your concern is that the oil level will get low due to the engine's burning oil. I recommend throwing in a good quality engine flush every other oil change as that tends to fix the oil consumption issue which is mostly due to the low compression piston ring in these newer cars getting stuck as the oil cakes near them. Also, more frequent oil changes help to avoid oil consumption problems to begin with.

It is possible to damage the engine running with a too high oil level, fortunately for most engines, it really has to be over-filled a lot for that to happen, say a quart or more. Depending on the engine, the harm of excessive oil can do inside the engine can vary from none to catastrophic.
The biggest problem with overfilling the oil is if the crankshaft splashes it around inside the engine where it is not supposed to be. The crank will quickly whip up the oil into a bubbly frothing mess that doesn't lubricate because it CAN'T. Then the oil can get thrown onto the cylinder walls, where it can overload the piston rings and get burned by the engine and form deposits. Excess oil can also cause excessively high oil pressure, and overload some of the engine seals, like the crankshaft seals, and might even blow them out and cause a major oil leak.
Basically, if your oil level is too high it's wise to drain some of it out which is exactly what you did -
