Dynamating the doors will make a world of a difference, and not it won't smell like asphalt.
pro's:
easy to work with and works well
con:
heavy and expensive
Just one thing to keep in mind... If you want to ever get that paintless dent removal in the future, the dynamat will prove to be a real hindrance. If that is not a concern I agree reduces noise tremendously.
I was thinking of dynmatting the doors also, never done it though. Is it as simple as spraying some adhesive on the metal under the door panel, and cutting out a piece of foam to fit it?

Dynamat has adhesive on the backing, so there's no need for any spray adhesive.
oh yeah, and get a small rubber roller and some gloves when you do it. the roller will make it easier to make sure that it is applied best, and if you don't use gloves be prepared for metal cuts....think about paper cuts and then kick it up a notch or two...not fun...
