Default Operating Temp how long to reach?

I purchase my 05 GX470 last April,
Had the timing belt and water pump replaced as part of the deal.
Lately in the cooler temperatures around the freezing point I've noticed that the temp gauge does not start to rise until I've driven about five minutes, longer if I go thru a drive thru and the truck is idiling in the line up and the heater fan does not come on until I've driven about 10 minutes.
The temp gauge takes about 15 -20 minutes of driving till it hits normal or half way on the scale.
This seems longer than what I consider normal, at least for the heat to come on.
What has been your experience?

That sounds pretty similar to or, perhaps, a bit longer than what I see with my GX, which is also a 2005. I'd say that the temperature gauge starts to move in about 3 or 4 minutes, and that it reaches its normal operating temperature in about 12 minutes. The heater fan starts to operate after about 5 minute, but, there isn't full heat coming out of the vents for about 10 minutes. The time for the heat to start warming the passenger cabin is longer than it is for my 2013 ES. Also, it takes longer for the heated seats to start producing warmth than it does in the ES.

My 2004 GX is also slow to blow hot air.
I'm used to Honda's - real heat in about 2 minutes.

I was skiing on Saturday, November 29th.
That is a line crossed off my bucket list, skiing in Nov. in Southern Ontario.

Going to hook up my scan gauge and see how the motor gets up to temperature, worried it might be my thermostat acting up.

From a cold start in the morning, it takes 3-5 minutes for the gauge to show some heat, my commute is a combo of stuck in traffic and moving about 50km/h for that initial warm up period. Did you have the t-stat replaced when you did the 90k service? 15+ minutes to get up to full operating temp seems way too long to me.
