Anyone know the largest tire (higher profile or wider) that would fit on the stock 17" rims?

Many people (myself included) over at yotatech.com and T4R.org run 265/70R17 on the GX470's sister, the 4Runner. They do not experience any rubbing issues using the stock 17" wheels. This is with no suspension or body lift of any sort. There will be a (very) small loss in acceleration, your speedo will be off by ~1 mph, and your mpg may decrease by ~ 1mpg...
