It's a battery that plugs into an existing vehicle power supply to keep the vehicle's electronics energized at a low level while the main battery is removed.
I use the below and I like it because it's a large battery and it plugs into the OBD 2 port instead of some that plug into the 12v accessory port (some of which are not always active when the ignition is off)

I don't believe they are lost, as they are written to the hard drive in the nav unit.
Now, what you will lose is your HVAC setpoints. Also, to prevent any issues, I would turn the HVAC fully OFF before removing the battery.
Anything that was in auto (heated seats, folding mirrors, etc) will be out of auto. Your backup mirror settings I think you'll lose, but the settings for mirror and seat position you shouldn't.
My battery has died a few times, and I've pulled it once to refresh the alternator. You'll be fine.
When you get back in the car, keep your foot OFF the brake, hit the ON/start button once and wait about 30sec. Then push it again and wait a good 30sec before actually starting the car back up and messing with things and it should be OK.
I remember they used to sell a 9v battery adaptor that plugged into the coig lighter "to keep radio presets". But I suppose that won't work with ours since 12v is disconnected.
Search on Amazon "obd ii memory saver" and you'll see a bunch that plug into the OBD2 port. I may have gotten lucky, but before I knew of the issues, I repeatedly disconnected/connected my battery while doing my sub install and didn't have issue. But it seems when stuff breaks, it breaks, so better to have that insurance.
A portable jump starter will perform the same function if you attach it to the positive and negative leads before disconnecting the battery, and is handy to have in the car anyway.

Only caution would be just making sure the jump starter is able to provide continuous power. I have a NOCO jump starter that cuts out after some time (as in not meant to be used in a continuous amp draw capacity).
