I tried to search but no luck...

What is our offset on the stock 17s on 98 GS400 wheels?

I have extra set in the garage and I'm thinking of putting them on my Highlander.

since it's 17 x 8, 255 will probably fit without stretch?

I have 245 on now, and it says they range form 7.5' - 10'. So 255: would cover 8' with no stretch?

There wouldn't be a stretch but it's more than likely to bulge out a bit on the side.

That's better, I like it when it bulges out, u sorta get more protection if ur close to a curb also, and u might not slightly scratch the rim, but instaed, slightly scratch the tires (who cares?)
