I have a 2017 Es350 loaner from my deapership. Love the car and fit and finish and after having it for a week my parents are looking to purchase this. My only apprehensions are in regards to the cabin space. I am 6 foot and larger male. I felt the front driving area was a bit cramped and even sitting as a passenger in the back felt a bit small. Am I perceiving this right? Will the new es have more cabin space?

I cannot, of course, speak for you, but I find the 2013 to 2018 ES to be a very roomy sedan. What are you currently driving such that you find this model of ES to be cramped?

That may be your problem: You are comparing a full-size flagship model to an mid-size, entry-level car.
It does not matter what others (including auto reviewers) may think -- if you do not like a car for any reason, you do not like it. If you find the ES to be cramped, it does not matter what I think, it only matters what you think.
Check out some of the early reviews that are available. There are a number of You Tube videos as well as from the automotive publications. The 2019 is a little larger and the reviews discuss where the space was gained.
No, it will feel like it has slightly less space because the roof line is lower / headroom lower / front seats lower / enter & exit slightly more difficult. That said, ride comfort and handling are substantially improved and so overall the car will simultaneously feel more sporty and agile yet also more isolated from the harshness of the road in a positive way. Your LS460 may feel a bit old and cumbersome to drive by comparison.
YouTube has reviews on new Avalon. Same space inside. One review I saw the guy was 6.2. Said he had plenty of room in driving position. He then sat behind driver seat with it in his driving position. He was comfortable in the back also
