Sports Mode
I own a 2014 ES350 and do a lot of mountain driving. Should I be using the “Sports” mode, and what effect does that have? Does it come close to simulating a 4WD vehicle? Thanks!

No, it basically increases the throttle response and tightens the steering wheel feel.

2014 ES350 Drive Mode
SPORT Mode and ECO Mode Control(1) During SPORT mode, the ECM optimizes acceleration feel by increasing the throttle valve opening angle more quickly at the beginning of accelerator pedal operation.
(2) During ECO mode, the ECM optimizes fuel economy and driving performance by gently generating the motive force in comparison to accelerator pedal operation. At the same time, it supports ECO driving by optimizing the air conditioning performance.

Having driven my '14 ES 350 in the Colorado mountains a few times, I can tell little difference between Sport, Normal, or Eco. The most used feature on those drives is the manual downshift on steep grades.
