Just tried the adjust the mat trick and it worked really well! That's nice in the hot and humid summers we get here.
On another note the ventilated seats do make some noise. Not like chain inside a pipe something is broken noise. But I recently noticed that the cabin is quieter when they are off. Otherwise you get a hissing noise that sounds like it's coming from the ac vents.

The ES is very quiet inside. I had an ES350 before my LS460 and felt the air flow was greater in the ES, but cooler in the LS. Both are pretty noisy fans when all the way up. I just back it down a bit, that seems to help.

I went to an electronic warehouse and found on the shelve various fans size for computers uses, i guess if you can find where the oem seat fan is located, you can swap for a stronger fan that run with the same voltage, mostly 12v. Or you can add another fan but not overloading the power.

If someone finds out the size of the original fan, it should be a simple replacement. I know mine aren't necessarily loud, but would actually like to put in some panaflows or something to quiet them down even further.

My 08 seat fan is somehow loud, you can easily hear it turning, i guess the bearing is not as smooth as your computer fan. I would think that is an easy swap if we can locate the original fan.
On another note, i was thinking of installing a fan next to my ML amplifier to keep it cool. Don't want to have a blown amplifier as it is very common.

Common chaps........the seat cushion fan is visible under the seat. Even on "high" it shouldn't be making much noise. If it is making some weird sound there may be something contacting the fan rotor. Have a look with a mirror and flashlight (the area under the seat should be kept clear of crap). The seat back cushion fan is not visible because of the air intake shroud.

I don't hear mine but I understand why other people do. The fan is a moving part and just like any other moving part, it wears over time. If you can hear the fan, then it's either touching something, lose, or the bearing is going. It's most likely the latter.
