my convertible bmw
So I am out shopping for a convertible and finally ended up with two choices.
White Exterior - Black top, natural brown leather seats & trim, black seat belts, black dash/console, HID lights, no heated seats
Red Exterior - Black top, tan leather seats & trim, tan seat belts, tan dash/console, No HID lights, heated seats
Both have the same mileage on them, and priced very close.
Which one do you think I should go with?

For me, I tend to prefer white on black. It would help to know the make/models you are considering though. That would impact my choice.
For example, in a Miata, I would go with the red, as I don't think they look that great in white, but an S2000 or 3 series look great in white.

Thanks for sharing the model.
In this case, I'd probably go white, though I really think either is a great choice. FWIW, I have had after market heated seats added before, and they were fantastic and affordable. Something to consider, as I would not be without heated seats.

^How do you do aftermarket heated seats?

Another point I am considering - I am not exactly a teenager
- Keeping that in mind and knowing I will be daily driving the car for the next 5 years or so, would I be able to pull off or live with a strong color such as Red?

I didn't even know the car and I picked White/Tan. With few exceptions, I think red screams "look at me" and since I also live in TX I would never go with Black/Black in a convertible. I had a Silver/Black S5 Cabriolet and that was hot enough.
Imola red without a doubt. The 3 series is a sports car, it deserves a proper color IMO.
Also, this being personal preference, but I wouldn't buy an automatic 3 series of that generation. Much more fun and engaging care with the manual.
