Of all of the cars I’ve owned I still really liked my LS460/600 steering wheel with the nice wood. Easily one of my favorites. I also liked the 1998 Supra steering wheel as well, especially compared to the crappy looking steering wheel in my GTR. I also like the steering wheel in the newer Mercedes AMG models like the one I test drove in the GLE63.
Some of my all-time favorites were from back in the late 60s, long before air bags forced major changes in steering-wheel design. But, as for the last 30-40 years per OP request, I'd go with the all-new one in the upcoming 2025 Buick Enclave Avenir, with its blue leather-wrap, the new Buick emblem in the circle, chrome-trim pieces, and the Super-Cruise embedded light-strip on the top rim.
I also think the wood steering wheel from the 2Gen Lexus SC430 was beautifully done.
Im a little biased but I like how Audi did the wood to leather blend on my W12 wheel.
Many of the hyper cars have amazing wheels designs but that's almost to be expected of them. Older 70s era Mercedes wheels are another type I like a lot

Some of the old Ford wheels (I don't remember exactly which years) had a rim-blow feature where you squeezed the rim harder to blow the horn.
