I understand where you are coming from, but, IMO, a marriage is more important than a vehicle....and I say that even as a car-enthusiast.
She doesn't care about a vehicle. Its not that she WANTS a minivan, she is afraid that not having a minivan will make her life more annoying in some way. She would much rather drive some small enjoyable car. Her focus about the minivan is the sliding doors and having to worry about the kids opening the doors into other cars. Which...they just need to be taught not to.
If she truly cared and wanted a minivan then that would be different.
If I were to replace our Highlander right now, we'd probably go with a minivan. The Highlander has been great, but a minivan has a more comfortable third row and more cargo room. The sliding doors would be nice in our tight garage. Even with only two kids, the amount of sports gear, friends, grandparents, etc. we often carry around could easily justify a larger vehicle. But our Highlander has been great and only has about 14k miles on it though we've had it for almost 4 years. When we bought it, we compared it against the Sienna of that time but didn't like the Sienna so that pretty much made the decision for us.

A lot of that is because your Highlander is so small. I was in the third row of a Highlander Uber last week, and it was awful. Compared to something like a Telluride or a larger crossover, they are much bigger inside and more comfortable.

No doubt. It's a tight third row. My bigger drive for a minivan is the additional cargo space, much easier entry/exit, and the large sliding doors. Lots of room for the dog too.

Yeah you can't beat them for hauling stuff, but you've got a pickup for that. To me the minivan would be great if I had 3 cars...you've got your truck to do cool stuff and travel in, and your GS to enjoy a great sport sedan, if I could have a nice SUV for travel and for enjoyable things and then keep the minivan for day to day use it would be great.
I'll definitely miss the sliding doors when our Rivian arrives. Except the POS driver's side sliding door that has a 60% chance of actually closing properly

I would think you would want to travel in your S-Class, with its extremely comfortable ride and noise isolation. That would be the ideal vehicle for the long jaunt down to Beckley.....and your kids are apparantly old enough now that they get along and don't need the third-row seat.

I would love to, but we don’t all fit nor does our stuff. 4 people and an 80 lb dog need more than a sedan to travel in, and when we travel we often drive people places once we reach our destination and sometimes take my mom with us and we need the third row.
As much as I would like to all of us traveling in the S class is just not practical.
