Is there a plug and play device that override the system to be able to use all controls on display while driving?
as well as watch DVD in the front?

I did both modes in my 2005 GX470 but can't find them for GX460 Premium.
If i remember correctly i had to ground speed sensor to be able to use phone and nav while driving
and had to install NAVTV to watch DVD's in the front.

I do not have GX470 anymore it was fully flooded in hurricane Sandy last month
In gx470 I owned the override was a simple solution by grounding the speed sensor wire, with no need to buy any other devices,
And i used NAVTV plug and play unit for DVD play in the front screen,.
I have 2011 Gx460 Premium now, can it be done the same way?

Did you get the one with the switch? it is a bit pricy i think $300 is a steep price

Yes, I got the one with the switch. They may have updated like the one for my RX, which does not have a switch. It operates from the steering wheel.
