The issue with oil consumption has spread to other brands as well, I think part of the problem is the never ending quest for improved fuel economy. I've heard that manufacturers make their rings with less tension for less engine friction/drag...which equates to better fuel economy. Audi, BMW, Honda, and GM have all gone through ring replacement and extended warranties on some of their engines as of late.
Perhaps that's the cause on the GS, but either way, saying 1 QT of consumption for 1,000 miles is normal, is ridiculous. Think of what that does to your combustion chamber...how much carbon and soot will build up in there and what happens to your cats.
I'd probably try a new PCV, perhaps running a little mystery oil to free up oil rings...maybe go to a heavier weight oil. I'd also be tempted to pull the intake manifold off and take a look at the backside of those valves...I imagine the carbon buildup would be substantial.
But the GS is not alone, I'll tell you that. Had a friend pull off his turbo cooler on his VW the other day and literally half a quart of oil poured out of it. He said they're known for PCV valve problems.
